One of our favorite ways to cool down on a hot summer day is with some frosty, chilled healthy ice pops!

These Rainbow Fruit Unicorn Popsicles are a cool, colorful treat that doubles as a serving of fruits and vegetables when made from healthy homemade purees (we’ve even been known to grab one for breakfast!).

A snap to make with a unicorn popsicle mold (kindly gifted to us by our friends over at Make It Your Own), this is the perfect opportunity to get your kiddos involved in the kitchen.

Plus, who can resist a magical unicorn treat?!

RAINBOW FRUIT UNICORN POPS – INGREDIENTS & SUPPLIES:

  • Fruit and Vegetable Purees (we actually used baby food pouches! But you can puree your own blends)
  • Unicorn Silicone Pop Mold

INSTRUCTIONS:

Make your own healthy and delicious rainbow unicorn fruit (and vegetable!) pops - a refreshing summer treat for kids!

You can also use frozen fruits, or pre-blended juices or purees mixed with spinach, milk or yogurt. Blend in a processor until thoroughly pureed. Or use baby food puree pouches. We’ve also tried yogurt! They make a great base like these frozen yogurt Unicorn Poop Cookies.

Pour your fruit and vegetable purees into the unicorn popsicle mold, adding as many flavor layers as you’d like. We went with a modified rainbow theme of 3 types of purees.

Once your rainbow unicorn popsicles have frozen completely, they’re ready to serve! As you can see from the video below, the molds do pop out quite easily. You want to wait a couple of minutes for them to defrost just a tiny bit. Be extra careful around the horn part and ease the popsicles out slowly to ensure your unicorns come out fully intact.
