SANDWICH SKEWERS: EASY BACK TO SCOOL LUNCH IDEA


We’re in full back to school mode which means a fresh start to the school year and focus on eating healthier. Like many parents, I’ve struggled with ideas on what to pack my kids for lunch and have found a few simple things help such as getting them involved in the kitchen, making the food look cute and palatable (especially when it includes greens, which my kids aren’t particularly fond of) and having easy to eat finger foods.

These easy sandwich skewers meet all these criteria and are a breeze to make. They are easy enough for school-aged kids to help pack the night before and can include different ingredients to meet their food preferences. Here, we’re making a classic sandwich skewer with lunch meat and cheese for protein, and vegetables like tomatoes and spinach. But you can get as creative as you’d like with your child’s favorite ingredients.

To make these sandwich skewers, you’ll need:

– Skewers
– Lunch meats (your favorite) we used turkey here
– Cherry tomatoes
– Baby spinach leaves
– Cheese sticks cut into cubes

To round off the lunch, we also included Horizon’s Cheddar Snack Crackers made of organic wheat and real cheddar cheese as well as their Mixed Berry Super Squeeze made of organic milk and fruit with 5 grams of protein. Including these snacks help ensure my kids get as much protein as possible since they tend to pick apart at their lunch. Having several options to make sure your kids get their dairy and protein intake is key. As many parents know, kids can be finicky so having a well-rounded lunch with options for them to choose and try new foods is important!

Going along with the variety, I also like to include a veggie and dip, even if they eat just a couple of pieces. Again, it’s all about offering your kids a variety of foods so they can determine what they like and don’t like. One of my favorite ways to serve veggies to kids is cutting cucumbers and carrots into cute shapes along with a yummy dip.

Now all you have to do is put this filling lunch together and you’ve got a well-rounded lunch you can feel good about serving your kids. What I like about this meal is that my school-age daughter can put it together herself as long as the ingredients are laid out. Finger foods are awesome in that sense.
