One of my daughter’s preschool friend’s mother brought some yummy quinoa and vegetable fried patties to share as a snack one day – and I remember thinking how delicious they were. The best part was that my daughter ate them up (although you’d think she was allergic to anything remotely healthy given how picky she is).

These kale and quinoa patties remind me of the snack we at that day and are an easy way to get kids to eat their veggies and grains – at least once in a while.
