EASY MINI BERRY BREAD LOAVES: TEACHER APPRECIATION GIFT IDEA FROM KIDS

Teacher Appreciation week is here and what better way to show your thanks than with some homemade baked goods? With berries in season, the kids and I decided to make these delicious mini raspberry and blueberry loaf breads - perfect for gifting. We couldn't resist adding a punny gift card: "You're a Berry Nice Teacher!" Completely kid-drawn too, to make it even cuter.

You can make these for any special person in your life and switch out the saying. How about "You're a Berry Nice Mom" for Mother's Day? :) 






Mini Berry Bread - Ingredients:
(makes 12 mini loaves, each one size 5" x 2" x 2")

- 3 1/2 cups flour

- 1 teaspoon baking soda

- 1/2 teaspoon baking powder

- 1/2 teaspoon kosher salt

- 1 1/2 cups sugar

- 1 cup vegetable oil

- 2 eggs

- 1 cup milk (we used 2%)

- 2 teaspoon vanilla extract (optional)

- 3 1/2 cups fresh blueberries and raspberries

- Baking spray

- Mini Loaf Pans

* A note about the mini loaf pans we used. These are paper pans that can be baked in the oven. You can purchase these at baking specialty stores or online. If you can't find them, make mini muffins instead!




Instructions:

Preheat oven to 375 degrees. Spray your mini loaves with baking spray and set aside on a baking pan.

1. In a bowl, whisk your flour, baking powder, baking soda, sugar and salt.

2. In another bowl, whisk your oil, eggs, milk, and vanilla. 

3. Combine the wet and dry ingredients and mix until the flour is incorporated. Do not overmix. Gently fold in your berries. 

4. Scoop into your mini loaf pans to fill a little more than halfway full.




Bake in a preheated 375 degree oven for about 35 minutes or until the tops are golden and spring back lightly when touched. Allow to cool completely. 





To make the gift tags, use a circle punch or just cut out circles from cardstock. Ask your child to draw a blueberry and raspberry holding hands and add the the words "You're a Berry Nice Teacher!'

Hole punch and add twine for the tag. Cut strips of parchment paper and use some washi tape to affix the paper to the sides of the loaf pan. Tie off the tag in the center as shown.
